Pumpkin Spice Bread

3/4 cup Bitty all-purpose flour 
1 teaspoon pumpkin spice mix (3T cinnamon, 2t ground ginger, 2t allspice, 1/4t ground cloves)
1/4 teaspoon salt 
1/2 teaspoon baking soda 
1/2 cup + 1 tablespoon coconut flour sugar (Sweet Revenge)
1 egg

1/4 cup oil

¾ cup pumpkin puree
1 tablespoon Greek yogurt 
1 teaspoon vanilla extract 


Preheat oven to 330º F and spray a loaf pan with nonstick, or smear with butter. Sift together the Bitty flour, pumpkin spice mix, salt, & baking soda. Beat sugar and eggs with a whisk attachment until combined. Slowly drizzle in oil and mix until the mixture comes together (you’ll see it start to stick to the walls of the bowl again). Add pumpkin puree, yogurt, and vanilla, mixing until evenly combined. Fold in dry ingredients. Pour into the lined loaf pan and bake for 50 minutes or until the middle is set.
